A NEW head chef wants to bring a bit of theatre to his food!
Chez Nous Bistro, in Marsland Road, Sale, has welcomed Louis Byrne from 20 Stories in Manchester.
Alongside general manager, Paul Lehmann, Louis plans to revitalise the menu at Chez Nous.
“I’m going to bring a little theatre to the food with sharing platters, twists on the classics and techniques usually reserved for fine dining restaurants,” he said.
With the focus on high quality produce, sourced where possible from the North of England, Louis will have a full complement of new menus, by the beginning of March.
Paul said: “In the short time that Louis has been here, he’s breathed new life into the restaurant, bringing with him a myriad of great ideas and experience. I’m really looking forward to taking Chez Nous in a new direction with him. Expect great things to come”.
Louis, aged 42, is in chef terms, relatively new to cooking, having begun 16 years ago, when his brother, Aidan Byrne, asked him to help in the kitchen at Tom Aikens, Chelsea.
Louis said: "In the kitchen I found my passion, something to graft for, and I haven’t looked back”.
