A Middle East-based entrepreneur wants to convert a Greggs bakery outlet in his home town of Sale into an Irish pub and eatery.

Ross Matthews-Smith, 37, owner of Fibber Magee’s Ltd, has applied for planning permission to change the use of the terraced property on Northenden Road.

The proposal on Trafford’s planning portal says Fibber Magee’s is a ‘long-established’ food and beverage business in Dubai, owned by Mr Matthews-Smith, a British expatriate.

“It has been operating for 28 years, making it one of the oldest licensed venues in the Middle East,” it says.

“Ross owns and operates five venues in Dubai and is partnered with Emirates Airline at the Dubai Sevens’ rugby stadium, where Fibbers is the primary catering provider.”

It says he is now seeking to establish a new venue in the UK in his hometown of Sale, ‘bringing years of experience, authenticity and originality to Sale Moor Village’.

“Fibbers is a traditional, authentic and original Irish pub, offering Irish staples (alcohol, soft drinks and food) live music, and entertainment,” the covering letter continues.

“The pub will offer typically Irish beverages, with some exceptions, and the food menu will be small, offering authentic Irish dishes, such as beef and Guinness stew, soda bread sandwiched/toasties, spice bags (chicken and chips) as well as a small breakfast menu.”

It says that produce will be sourced locally from independent businesses, including the butchers and grocers in the village.

The conversion will mean works will be needed inside the property and a new shop front will be installed.

Proposed hours of opening will be from 8am to 11pm Sunday to Thursday and 8am to 1am on Friday and Saturday.
