A TRAFFORD Centre restaurant has been ordered to improve immediately after it was caught 'falsifying' its records by a food hygiene inspector.

The inspector from Trafford Council visited Pan-Asian restaurant Tru Street in July, giving it a one-star food hygiene rating for 'major improvement necessary'.

They underlined a number of issues, but first and foremost was a suggestion Tru Street 'falsified' its Hazard Analysis and Critical Control Point (HACCP) plan.

This is an obligatory plan listing the risks to food hygiene and setting out procedures to avoid them.

In a report, the inspector said: "HACCP records – falsified. They must be completed and accurate."

"Falsifying records is a serious matter and must stop immediately."

Other issues included cross-contamination, with cooked and raw food left in the same place, plus food left cooling at room temperature for more than six hours.

The inspector said: "This is an unacceptable and an unsafe practice. Food must be cooled quickly."

Tru Street was told to make immediate improvements in these areas.

For other issues, such as 'inadequate' allergen procedures and staff training, with the head chef described as 'lacking in understanding', Tru Street was given four weeks to improve.

The inspector suggested that the restaurant stops serving allergen-free food, and that it reduces the number of dishes on its menu to alleviate pressure on its staff.

Finally, at the end of the report – all in capital letters – the inspector said: "Standards very disappointing and must be improved. I will revisit to follow up."
