TINSEL, sage and onion stuffing and cigar and bourbon custard flavoured ice cream are all on the menu at Amba in Hale this month, as the restaurant seeks to create ‘a new taste of Christmas.’


Ryland Wakeham, proprietor at Amba, said: “As much as we love tradition, sometimes it’s nice to be able to serve up something different to our diners.


“We made a list of all the things which come to mind when we think of Christmas and set our head chef, Peter Rowley, to work creating some of these flavours.”


The sage and onion stuffing ice cream combines naturally caramelised sugars in the onion with fresh sage, while the tinsel is flavoured by sweet marshmallow with gin, white chocolate and vanilla and cigar and bourbon custard contains hints of lightly infused Cuban cigar custard with fragrances of cinnamon, vanilla and bourbon marinated figs.
 

While these new offerings may not topple mince pies and Christmas pudding from the top of the nation’s favourite festive desserts, but will you be brave enough to try a new Christmas taste this season?
