HUSBAND and wife culinary entrepreneurs, Gavin and Jane Gosnell, are preparing to launch their newest venture on Northenden Road in Sale this week, a brand new American diner and bar called Mustard.

This duo is no stranger to the restaurant scene in south Manchester, having launched the successful Oca at Sale’s Waterside 10 years ago.

Their new venture takes inspiration from the small, stylish eateries in New York’s Soho and Greenwich Village. The £150 000 project showcases industrial architecture with exposed brick-work, polished wooden seating mixed with comfortable booths and other natural and contemporary materials such as zinc are very much on show in the new design.

“Our menu also captures that unique concept that is New York food. A fusion of classic and modern American cuisine, with influences from the country’s Italian, Mexican and Cuban heritage and America’s deep south – and all made with the best quality, freshest locally sourced ingredients.” said Jane.

“We knew that Sale was the location for our new restaurant as we live in the town and love its vibe and people. Sale already has a wealth of European and ethnic restaurants though, so it was crucial that we could offer something different to the social scene – a new culinary concept.”

Gavin added: “Then on a trip to New York we were sampling some of the amazing food and the idea emerged of a cool New York-American eatery combining an informal dining concept with great cocktail bar. And so Mustard was born.

“As a father of two I also saw the importance of making Mustard a place for the whole family to enjoy, so we will offer mini portions of our great food for smaller customers, and a daily family brunch complete with poached eggs with hot chicken on toast, a brunch burger and a stack of pancakes or French toast with blueberry compote and cream or maple syrup and bacon.”

Mustard officially opens on Friday, June 24.
