THE owner of a Stretford cafe has been banned from operating a food business until further notice after pleading guilty to eight food hygiene offences.


Wayne Ruddock, the owner of JT’s Pastry and Snack Bar, on Edge Lane, was prosecuted by Trafford Council on December 6 after repeatedly ignoring the warnings of environmental health officers.
 

Trafford Magistrates’ Court ordered Mr Ruddock to pay a £200 fine and £700 towards the council’s costs, as well as his ban from operating JT’s or any other food business.


The council’s environmental health officers carried out a routine inspection at the cafe in July 2012, after which Mr Ruddock was served with hygiene improvement notices which legally required him to provide a wash hand basin and put in place written food safety procedures.
 

Subsequent visits between July 2012 and April 2013 found that he had failed to comply.


These included a consistent failure to adequately control the temperature of hot and cold foods and the storage of food, so that there was a risk of cross contamination.
 

Executive councillor for highways and environment, Cllr Alan Mitchell, said: "When people eat out at their local takeaway or restaurant they expect their food to be prepared in hygienic, well-managed kitchens.


“We expect all food businesses to take food hygiene very seriously and do everything they can to protect their customers from food poisoning.
 

“We will work with businesses to help them improve and maintain standards, but we will not hesitate to take formal action against those who put public health at risk."
 

JT’s Pastry and Snack Bar currently has a rating of 0 which means 'urgent improvement necessary'.
